Ingredients
- 1/2 seedless watermelon
- 1/2 cup sugar
- 1/4 cup chocolate chips (or a few more if you're like me)
- 1 pint lime sherbet ice cream
- In a blender, mix seedless watermelon pulp and sugar until smooth
- Freeze for about 3 hours, or until it has the consistency of a slushy
- Mix in chocolate chips
- Spoon watermelon "slush" into disposable dixie cups, leaving about a half inch of space on top
- Freeze for another 2 hours, until the slush is hard, but not completely frozen
- Spoon lime sherbet into the cup so it fills the layer and reaches the top of the cup
- Stick a popcicle stick into each cup
- Freeze over night and enjoy!
If you want to make these an adult dessert, add a shot or 2 of vodka into the slush and you have a refreshing dessert with a kick!
