Watermelon Ice Pops!

Every so often I decide to actually make something I've pinned, and summer is the perfect excuse to try these adorable and delicious watermelon ice pops! They need to be prepared a day before, but they are so easy!  They are perfect for summer picnics, BBQs, or just any hot day!

Ingredients
  • 1/2 seedless watermelon
  • 1/2 cup sugar
  • 1/4 cup chocolate chips (or a few more if you're like me)
  • 1 pint lime sherbet ice cream        
Directions
  •  In a blender, mix seedless watermelon pulp and sugar until smooth
  • Freeze for about 3 hours, or until it has the consistency of a slushy
  • Mix in chocolate chips
  • Spoon watermelon "slush" into disposable dixie cups, leaving about a half inch of space on top
  •  Freeze for another 2 hours, until the slush is hard, but not completely frozen
  • Spoon lime sherbet into the cup so it fills the layer and reaches the top of the cup
  • Stick a popcicle stick into each cup 
  • Freeze over night and enjoy!







If you want to make these an adult dessert, add a shot or 2 of vodka into the slush and you have a refreshing dessert with a kick!
