I can't say enough good things about this recipe.
It is the definition of dump everything in a slow cooker, come back 4 hours later and voila! Deliciousness.
I found the recipe from Pinterest, and for the first time felt comfortable switching things around to what I thought would be better, and it worked!

Slow Cooker Thai Coconut Soup
Ingredients:
1 can (14oz) Coconut Milk- {I used lite}
1/2 cup yellow curry paste- {We used about 1/2 cup, but added a few more blops for a stronger flavor}
2 cups chicken broth
2 chicken breasts- {you can omit this to make it vegetarian}
1 handful sliced white mushrooms
Lime juice-from a bottle or fresh limes
Crushed red pepper flakes
Salt & Pepper
Chopped cilantro
Directions:
1. Combine milk, curry paste, broth, chicken, mushrooms, a few squirts of lime juice, salt, pepper (just a bit- to taste), and crushed red pepper flakes in slow cooker.
The red pepper flakes make the soup deliciously spicy, but be careful! The heat really spreads as the soup cooks, so only add a little at a time!
2. Cook on LOW for 4 hours, or on HIGH for 2-3
3. Before you serve, remove chicken, shred it, and return to slow cooker.
4. Serve over rice or egg noodles (we used thai egg noodles, it made it like spicy thai chicken noodle soup!)
5. Squirt some more lime on top and sprinkle with chopped cilantro flakes
6. Enjoy!
